"Hen's Tooth" Brewed to be savoured slowly... and enjoyed to the full. By Morland of Abingdon, brewers of the famous "Old Speckled Hen". Hen's Tooth is a bottle-conditioned ale, the nearest thing to 'real ale' in a bottle. Whereas the taste of ordinary bottled ales passes its prime within a relatively short time, bottle-conditioned beer just gets better and better, reaching its finest, fullest flavour after as many as 12 months. You can identify this special kind of ale by the sediment you'll find in the base of the bottle. This is a measured amount of active yeast that reacts with sugars in the beer and carries on fermenting throughout the beer's life. It's the same maturing process that occurs in a sealed barrel of real ale. It also gives the ale its characteristically smooth, foamy head. The presence of Morland's unique 100-year-old yeast gives Hen's Tooth its initial flavour and character, then helps make that flavour even richer and more distinctive as it develops in the bottle. (If you wish to prevent the yeast sediment from tipping into your glass, pour the ale carefully and steadily - a well-rewarded moment of care!)
